Chips and Salsa

One of my favorites snacks is chips and salsa. I get in trouble when I go out to Mexican restaurants, filling myself on chips and salsa before the meal comes. Homemade salsa is my favorite. It just has a much fresher taste. Many Mexican restaurants make their own and you can tell...it is just better that way.

With the tomato crop in full swing, this is a prime time to make homemade salsa. This recipe is very healthy and very tasty. This is the ratio to use, you can easily scale it up.

10 tomatoes, diced
2 small hot peppers, diced
1 small onion, diced (optional)
2 tbsp olive oil
2 tbsp Lime juice
2 tsp salt
1 small bunch fresh cilantro, chopped (optional)

Combine ingredients in bowl and let sit overnight. I feel this salsa is best served with Scoops, the little bowl just holds so much of the tasty salsa. Serve with Baked Tostitos Scoops Tortilla Chips to make this a better for you snack.

Adding the onions and the cilantro certainly give a different flavor to this salsa...I almost think it is "fresher" tasting without and don't always use them.
