Chicken Rustica

I love my crock pot. I don't use it nearly as much as I should. I make a number of recipes that I know would be equally good and a lot easier in the crock pot, but I always seem to forget to try.

I am fortunate that my husband works at home much of the time, allowing me to do crock pot meals during the week. I use the slow cooker primarily to make soups and main dishes. Occassionally, I will make an appetizer for a party in the crock pot as well. I have never been adventurous enough to make a dessert in it - just seems strange to prep a dessert in a slow cooker, although the recipes sound really good.

One of the meals that we do make with some regularity in the crock pot is Chicken Rustica. It has a very nice flavor and we normally serve it over an egg noodle or pasta. I sometimes will substitute prosciutto for the bacon for a more smokey flavor.

Chicken Rustica

1 - 1 1/2# boneless, skinless chicken breast, cut in 1" strips
1 tbsp crumbled bacon
1 can (14.5oz) diced tomatoes
1 can (15oz) artichoke hearts, quartered
1 packet dry chicken gravy mix
1/4c dry red wine
2 tbsp Dijon mustard

Combine all ingredients in slow cooker. Cover and cook on low for 6 - 8 hours.
