Spicy Chicken Roll-ups

Frequently, on weeknights, I feel very crunched for time. I want to make dinner as quickly, or at least with as little time as possible in the kitchen, so that I have more time to spend with my family. I accomplish this in a number of ways. Sometimes, it is a matter of doubling recipes when I make dishes - one to serve and one to freeze. This allows me a quick meal from the freezer, that might need to cook for some time, doesn't require much time in the kitchen. Sometimes, it is a matter of multi-meal cooking - such as when I grill chicken for one night's meal, I grill extra to give me a start to the next night's meal. Sometimes, it is prepping everything the night before and just assembling and cooking at dinner time. And sometimes, it is simply preparing a quick and easy meal.

One quick and easy meal I make is Spicy Chicken Roll-ups. The nice thing with this recipe is that you can use canned chicken or chicken that was baked or grilled the night before to really shorten prep time.

Spicy Chicken Roll-ups

1 c cooked chicken breast, diced
1/4c diced tomatoes with peppers and onions (can substitute sauce)
dash crushed rosemary
dash crushed oregano
1 tbsp grated Parmesan
1 package refrigerated crescent rolls
1 c shredded mozzarella

Preheat oven to 400. In small bowl, combine chicken, tomatoes, rosemary, oregano, and Parmesan cheese. Lightly grease baking sheet. Separate crescent rolls. Spread 1 tbsp mixture onto each crescent roll. Start with the short side of triangle and roll toward the long point. Place on baking sheet.

Bake rolls at 400 for 11 - 13 minutes. Remove from oven. Top each roll with mozzarella cheese and place back in over until cheese melts.

You can serve these with a small side of tomato or pasta sauce for dipping.
