Sweet Potatoes

Growing up, I was convinced that I didn't like Sweet Potatoes. I'm not sure if I ever even tried them. I'm not sure what I thought could be so bad about a dish that was covered with marshmallows, after all I love marshmallows.
To this day, I've never made that traditional style of candied sweet potatoes. I've had quite a few other variations - Kahlua Candied Yams, Sweet Potato Casserole, Mashed Sweet Potatoes, and Sweet Potatoes with Pineapples. The last one, I actually made for the first time at my daughter's birthday a few weeks ago. I usually use fresh Yams to make my sweet potato dishes, but keep a couple cans of vac pac Sweet Potatoes on hand. These are like pre-boiled sweet potatoes with no syrup. They make recipe preparation a snap and since they don't have any syrup, they are very similar to fresh.

Sweet Potato Casserole

3 c mashed sweet potatoes (about 2#)
1/2 c granulated sugar
2 large eggs, lightly beaten
1/2 c milk
1/4 c butter, melted
1/2 tsp salt
1/2 tsp vanilla extract
topping:
1/2 c packed light brown sugar
1/3 c flour
1/3 c butter, cut into pieces

Preheat oven to 350. Grease a shallow 2-qt casserole.

In a medium bowl, stir together the potatoes, granulated sugar, eggs, milk, butter, salt and vanilla. Scrape the mixture into prepared casserole.

In a small bowl, stir together the brown sugar and flour. Sprinkle over the top of the casserole. Dot with butter.

Place casserole on baking sheet and bake uncovered 30 -35 minutes. Let stand 10 minutes before serving.
