Corn Dog Muffins

When I think of summer, I think of fairs. One of my favorite summer fair foods is corn dogs. I came upon a recipe a while back for Corn Dog Muffins. A great convenient way to enjoy that corn dog taste at home for less. I never did remember where I saw the idea, so I did some improvising and to come up with a recipe.

Corn Dog Muffins
1 package Corn Muffin Mix
1 TBSP Brown Sugar
3/4 c milk
1 egg
2 Hot Dogs, cut into bite size pieces (I use all Beef)

Combine all ingredients, except hot dogs and mix well. Stir in hot dogs. Spray 8-9 muffin cups with non stick spray. Fill each muffin cup about 3/4 full.

The recipe can be easily doubled and the muffins freeze reasonably well. I used a sweet yellow honey corn muffin mix, but if you have just regular, you might want to consider adding a little bit of honey to give it that sweet corn dog flavor.
