Menu Plan Monday

Tomorrow is back to a regular schedule around here. I return to work and the kids to school/daycare. It is going to be a rough morning I am sure. I have some easy, pull them out of the freezer menus planned for this week to help ease us back into the daily routine.

I did head to the grocery Sunday. It was a rather expensive shopping trip, but the last few weeks have been low, so it all balances out in the end. I also picked up a number of frozen meals that were on a great deal for packing in lunches for my husband and me.

At our house, we don't eat breakfast or lunch together during the week, so there is minimal planning that goes into those meals. For us, the focus is dinner.

Chicken Philly Steaks/Buffalo Chicken Philly Steaks

Chicken Gravy over biscuits

Cube Steaks and Rice

Macaroni Grill - pasta kit with Chicken

Turkey Open Face Sandwiches

Pork Tenderloin

Cheesy Chicken Pasta

Weekdays breakfast is at daycare for my daughter, the rest of us eat cold cereal, frozen waffles, oatmeal, toast or whatever strikes our fancy. Lunch we pack, usually leftovers for me. My son either packs or buys lunch at school. If he packs, it is generally a lunch meat sandwich or a PB&J with some sides.

We get going full force tomorrow - yuck! We love cube steak around here. I coat it in flour and brown both sides in a dutch oven. Add in some onions, about a cup of chicken broth and let it cook for about 2 hours. It melts in your mouth!
