Soup's On

It has been so cold and blustery this week. I can't think of much better to eat than a good hearty, warm bowl of soup. In the winter, I frequently will pack soup in my lunch. Especially if it is nice enough for me to walk at lunch. When I get back from a brisk walk, the soup warms me up. I have many favorites, some of which I even make from scratch.

I have shared a few of my favorites here:

Taco Soup
Roasted Red Pepper Bisque
Egg Flower Soup

Here is a soup I usually make. It's not my favorite, as I don't generally care for beans, but my husband and kids enjoy it.

Black Bean Soup
Soup:
2 15oz cans black beans (can use dried beans, need to soak and add liquid to recipe)
1/4 c diced red onions
2 tsp chopped jalapeno slices
1 tsp sugar
1 tsp cider vinegar
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp cayenne pepper
1/2 tsp chili powder
Garnish:
4 tsp diced red onion
6 to 8 jalapeno slices
sour cream

Pour canned beans along with the liquid into a medium saucepan. Add the remaining ingredients and mix. Bring to a boil. Lower heat and simmer covered for about an hour adding water if necessary or until it is as thick as you like. Ladle into bowl and top with garnish.

My mom and I were just talking about black bean soup. She asked if I had a recipe for one. Guess what I now have a GREAT!!! recipe for one. THANKS!!! I think she will love it. Geri

I think bean soups are an acquired taste. It took me years to enjoy black bean soup. I finally found a Cuban recipe that uses sherry wine and that appealed to me. Have a great day.
